Cairean's Apple Pie Recipe

Ingredients:
- 2 eggs
- 250ml sugar
- 100ml evaporated milk
- 25ml butter / margarine (melted)
- 250ml self raising flour
- Pinch of salt
- 6 – 8 cooking apples (peeled, cut into cubes and cooked for approx. 5 minutes) – stand to cool down
SAUCE
- 1 tin (397g) caramelized condensed milk
- 100ml evaporated milk
Pre-heat oven to 180oC / Gas Mark 6.
Grease an ovenproof pie-dish with a volume of approx. 1 litre.
Whip eggs and sugar until light yellow and foamy.
Add melted butter and evaporated milk.
Stir in dry ingredients and mix everything well together.
Lightly mix in apple cubes.
Place everything in greased pie dish.
Bake for 30 minutes.
Mix condensed milk and evaporated milk and pour over warm pie as soon as it comes out of the oven.
Cool down, and place in the refrigerator before serving.
Serve with whipped cream.
